  Gillis is a Scottish name, meaning "The servant or disciple of Jesus." (Source: New Dictionary of American Family Names, Elsdon C. Smith.) Beverage for certain services on Burnt Island, possibly even as resident caretaker. George subsequently bought the island from Beverage and lived there as a fisherman until about 1907, when he dismantled the old Cooper homestead and removed it piece-meal to North Haven, where he constructed a new home which still stands.
