Eureka! I just found Jacob H. and Martha on the 1900 census in Ellenwood, Clayton County, Georgia. They have been married 34 years (which would have been 1866) and she had 4 children, 1 living. She couldn't have been the mother of the rest of the children born prior to 1866. Thanks for the tip! Now, if I could just find him on the 1860 census. I'll look in that same area. I think I already have, but I'll check again!

Lord, 1937 and the 161 of the Independence of the United States of America, before
me, J. M. Batchelor, M. D., Chairman of the Board of Health and Ex-Officio Recorder
of Births, Deaths and Marriages, is and for the Parish of Orleans, and the City of
New Orleans, personally appeared
Thos. Collins, an undertaker, native of this city residing at no. 4800 Canal St.
who hereby declares that
Mathilda Eberhardt (white) a native of New Orleans, LA. aged 65 years departed this life on 24th of June 1937 (ca 1872)
at no. 1427 Cambronne Street in this city.
Cause of Death: Hypertensive Heart Disease, Cerebral Hemorrhage
