Note: N109 James immigrated to the US from Scotland in 1878 from Barr, Scotland. He met Stella while learning the cheese making business from a cousin, Will McKerrow in Newport, NY. Shortly later they moved to Orwell, NY where my Grandfather was born. As I am sure you are aware of, there were Crossetts in Orwell which is why they went there. James was one of 4 boys who came over, 3 operated cheese factories along the flanks of the Adirondack Mountains which was dairy country but in the winter you couldn't ship milk out because of the weather so making cheese was the best way of preserving it. Much was sent back to England where it was sold as English Cheddar. (email from Jim Kirkland.)
